Our dedicated crew is trained extensively to become master fish mongers, hand trimming each fish into fillets and portions that are weighed and measured. At Aquafisk, hand trimming is our process of choice. It simply produces the most perfect cuts. Using our hands and a knife to custom process each fish allows us to trim the pieces to look pristine, to consciously minimize waste, and to visually and manually inspect each cut to ensure excellence everytime.

Hand trimming also makes our fish a better value because in a market that sets price per pound, less waste equals more fish for your dollar. And hand trimmed cuts are most convenient and create less mess for chefs and seafood counters. When you don’t have to extensively butcher a fish, less time, less utensils and less counter space is used in its preparation.

Our Iceland processing facility is comprised of dedicated and valued experts, seasoned in the art of hand trimming fresh Icelandic fish—many of whom have grown up in the industry we acknowledge as our national treasure.

We employ the latest and most advanced machinery in our work, but for portioning, we believe that hand trimming is the best technology.
